Gosh, I love a good pancake. Soft, fluffy, warm, sweet and full of empty calories. Typically I save pancakes for a special occasion like Sunday brunch or Wednesday night. However, today was different. Upon my daughter’s request, I was whipping up an order of pancakes for her lunch when I had a lightbulb moment. What if I made myself a vegan protein pancake?
What is a Vegan Protein Pancake?
Seriously these vegan protein pancakes cannot be any easier. There is no need to get all creative with a mixture of flours. Just saying you can leave the egg out of the premade box mix and sub in a nut milk to make your pancakes vegan. I like to use a gluten free pancake mix that I pick up at my local bulk food store.
What takes this delicious breakfast nosh from empty calories to a plant protein packed pancake is the addition of protein powder. Add 1 scoop of your favorite vegan protein powder and voila you have vegan protein pancakes.
Being a plant-based baker means I always have a can of coconut milk chilling in my fridge. When you chill a full fat can of coconut milk the milk will separate from the water. This gives you a hardened coconut milk also known as coconut cream. Coconut cream is mainly used in plant-based dessert baking. However, for these vegan protein panckaes, I tuned the coconut cream into a coconut whip.
To make the coconut whip take one can of chilled coconut milk and scoop out the contents, leaving the water behind. Into a bowl add the coconut cream, 1-2 tablespoons of powdered sugar (depending on your taste for sweetness) and 1/2 teaspoon of vanilla extract. Whip it all together by hand until smooth and place a dollop onto of your vegan protein pancake. Top with mixed berries and get ready to go to taste heaven.
It is so easy to veganize many of the meals we once enjoyed before we were vegan and pancakes are one of them. I say if you are going to be enjoying a guilty pleasure up your game and up your protein. Enjoy!
