Anything you can do I can do vegan. Seriously, if it’s originally made with dairy, eggs or meat, then you make it without. Take this 3 ingredient vegan pudding for example. It is so easy to make and I think tastes even better then dairy made pudding. It’s smooth, silky, creamy, and so addictive. I’ll have you licking your bowl.

Are you a team chocolate or team vanilla? Personally chocolate has always been my go to, but this vanilla flavor is amazing, and it only takes 2 ingredients to make the vanilla vegan pudding. Want chocolate? Add in the 3rd ingredient, cocoa powder, and you got your chocolate.

Yup, just 3 for this vegan pudding and here they are…
Coconut Milk (Full fat from a can, chilled in the fridge)
Sunrise custard flavor tofu
1 tablespoon of Cocoa powder (for team chocolate)
Perhaps you have seen desert tofu in the grocery store and wondered what you would do with it. You can totally eat it on its own, although I find it a bit lackluster. Sunrise brand makes many different flavors, making it the perfect ingredient for flavored desserts. I chose custard for this vegan pudding knowing that paired with coconut milk I would get this accidental vanilla flavor. You see there is no added vanilla flavor in the vanilla vegan pudding. How to make Vegan Pudding
I like to keep a few cans of coconut milk in the fridge for times when I want to make something that requires coconut cream. For this pudding, I decided to use the coconut cream. Coconut cream occurs when the coconut milk separates from the coconut water. It’s best to have a can of coconut milk chill in the fridge overnight in order to get the best separation. This is why I always keep a couple of cans in the fridge ready to go.
Simply scoop the coconut cream out of the can leaving the water behind (save the water for a smoothie) and add it to a high-speed blender along with the Sunrise custard flavor tofu. Be sure to pat the tofu with a paper towel to remove as much moisture as possible. This type of tofu is very soft so be careful not to press too hard.
Blend until the tofu and the coconut cream is well combined. Pour out half of the mixture into 1 or more single serving dish(s). Add 1 tablespoon of cocoa powder to the remainder of the mix and blend again until it looks like chocolate pudding. Yummy. Pour the chocolate vegan pudding into 1 or more dishes and your done. Tap dishes to remove any air bubbles and let sit in the fridge for 2 to 4 hours. Hint: The longer it sits in the fridge the thicker the vegan pudding will become.
Just one flavor
If you only want vanilla than skip the cocoa powder. Perhaps you want all chocolate? Rather than 1 tablespoon of cocoa powder add two. It’s so simple to make this vegan pudding just the way you want it to be.

Simple 3 ingredient vegan pudding. Creamy, light, vanilla and/or chocolate
- 1 Can Full Fat Coconut Milk Chilled in fridge overnight.
- 1 Package Sunrise Custard Flavor Dessert Tofu
- 1 tbsp Cocoa powder
Blend coconut cream and tofu in a high powered blender until smooth
Remove half of the mixture and add to a serving dish. This is your vanilla flavor.
Add cocoa powder to the remaining mixture and blend until well combined. Add to a serving dish. This is your chocolate flavor.
Tap dishes to remove any air bubbles and chill in the fridge up to 4 hours or overnight for a thicker pudding.
Garnish with fresh raspberries and mint. Enjoy.
